Simon the chef

I’ve been watching a video on youtube narrated by a chef called Simon who lives and works in New Zealand and describes his diagnosis of having type 2 diabetes and how ultra processed food is killing us.

Its called How Ultra-Processed Food is Slowly Killing Us | ENDEVR Documentary and is on the Endevr documentary channel - 2 Nov 2022

I’m about 10 minutes in and already am seeing things in it I recognize with painful clarity.

Simon is a good guy and he has worked hard all of his life. He has a daughter and wants to grow old enough to see her grow up. But having been diagnosed has having type 2 he fears he could lose that opportunity.

The effects of having type 2 are devastating, including but not limited to, blindness, amputation, kidney failure and heart disease. The list goes on.

I well know what he and the doctors in this first 10 minutes are talking about having had some of the symptoms already myself and having been diagnosed with type 2 diabetes in 2019.

Simon starts his report stating the problem in his country, much the same as mine in the UK, that obesity is now at pandemic levels. I find this appalling and I’m sure you do too.

Before I watch the next sections of this video I am going to have a lie down in a darkened room. So until tomorrow I will take a pause but would non the less like to point out that I have been able to achieve both reversal and remission of type 2 diabetes and, I believe’ have a similar body build now to that of Simon in this video. So if you are in a similar situation to Simon, please don’t give up hope. There is a way out of this. You can do it, as if someone like me can do it, then so can you.
