Eggs
I’m old enough to remember eggs being in headline news in the UK due to the salmonella scare in the 1980’s. Since then eggs have been in and out of favour with the health industry and the media, even being blamed for heart disease.
However, eggs are a great source of protein and healthy fat and contain essential vitamins and minerals. They are also high in omega 3 fatty acids which are good for the heart and brain.
Here are a few more benefits of eggs in that they are a great source of:
- vitamin B2 and B5 which is essential for energy production and the nervous system.
- vitamin B12 which is essential for the nervous system and red blood cell formation.
- choline which is essential for brain health and development.
- vitamin A which is essential for eye health and the immune system.
- vitamin D which is essential for bone health and the immune system.
- vitamin E which is essential for the immune system and skin health.
- vitamin K which is essential for blood clotting and bone health.
And now, as I have come to the conclusion that healthy fat is not going to give me a heart attack, neither too are eggs. Huzzah!
So needless to say, I often break my intermittent fast after up to 20 or so hours by eating some eggs, be they boiled, fried ( in healthy fat of course ), scrambled or part of an omelette. Some days, I can go a whole subsequent 24 hours without eating again as a result of the satiety that eggs provide.
Combined with other healthy fats and keto friendly foods such as avocado, bacon, cheese and fish, variety is possible and I subsequently don’t get bored of eating them.
Another point I found on line from others that promote keto and even the carnivore diet is that when we were eating primarily carbohydrate diets, our bodies were being starved of essential nutrients and vitamins. This is because the body was using up all of its resources to process the carbs and sugar and not getting enough of the good stuff. This is why we were always hungry and craving more food and sometimes mistaking this for craving greater variety. Thus, keto diets are sometimes wrongly accused of being boring and lacking in variety. However the opposite is in actual fact the case and more so, we eat less because we are now supplying our bodies with the essential nutrients and vitamins it needs.
