Bread

Bread is a grain based food and is inevitably high in carbohydrates and as such is a food that keto dieters avoid.

I therefore avoid bread and have not eaten it for over a year now except for very occasional incidents where it would be difficult or impolite to refuse.

Frankly this annoys me as bread is something I never thought unhealthy but there are reasons for this.

Firstly, modern manufacturing processes have changed the nature of bread. It is now made with a high proportion of refined flour and it is risen to expand the volume of the dough, I think to increase the profit margin. This is not the bread that our ancestors ate.

Secondly and most fundamentally, the condition that I have is in my view wholly caused by over consumption of carbohydrates, processed carbohydrates and sugar based products over a long time. Therefore, the fact that I now cannot as I did before eat bread and bread based foods is down to other things that are not themselves bread although cheap factory made bread will be a part of the issue.

For years my wife and I, mainly my wife I have to say, made bread with a bread maker. This meant that we could purchase the best possible flower and make bread that we sourced the ingredients for. This resulted in a home made product that we had control over the quality. I rarely eat more than a few slices per day. This was the limit put on bread by the low GI diet that I followed for a while.

So now, no bread and from time to time I do miss that. If I dont eat another packet of crisps or a chocolate bar for the rest of my life, the only ones to suffer in any way are the greedy food manufacturers that make them full of unnatural additives.

There is a glimmer of hope that I may at some point look into my now fasting diet pattern where by within a fasting period as glucose levels are controlled there could be a window in which small amounts of very rough or course bread that is wholly home made could be consumed. However at this time I’m not in any hurry to jeopardies my current progress and remission from type 2 diabetes.
