The Big Fat Surprise - Why Dietary Guidelines are Making us Fat
Nina Teicholz is an investigative science journalist who has written a book called The Big Fat Surprise. This book is about the history of the low fat diet and how it came about. I’ve not read it yet but plan to now having only just come across Nina Teicholz, having viewed a video interview by @DavidPerlmutterMD on YouTube.
I found this of interest due to the nature of the conversation and their comments on fat and how we need to eat fat if we are to lower carbohydrates as without doing so, diets based simply on low calorie and low carb will fail due to them being unsustainable. The key to understanding fat as a crucial part of low carb and ketogenic diets is that it makes you feel full for longer than if you were just eating carbohydrates. An additional bonus is that glucose and subsequent insulin levels are not raised appreciably by eating fat.
